Ketogenic cinnamon rolls

Ingredients

    For the roll itself
  • 5,7 dl / 19 oz almond flour
  • 0,5 dl / 1,6 oz coconut flour
  • 2 eggs
  • 1 tbsp vanilla extract
  • 0,5 tsp baking soda
  • 4 tbsp of stevia
  • 0,5 dl / 1,6 oz melted coconut oil
  • For the filling
  • 3 tbsp of stevia
  • 2 tbsp of cinnamon
  • 38 gr / 0,16 cup of pecans
  • 0,5 dl / 1,6 oz melted coconut oil
  • For the frosting:
  • 4 tbsp of cream cheese
  • 1 tbsp of vanilla
  • 60 gr / 0,25 cup butter
  • 4 tbsp of stevia
  • 1 tbsp of milk

Instructions

  1. Preheat the oven to 200 C / 390 F.
  2. Mix the coconut flour, almond flour and baking soda together in a bowl.
  3. Scramble the eggs in a bowl, add the stevia or your choice of sweeteners, then add the melted coconut oil. Add in the vanilla extract.
  4. Mix the 2 bowls together until it becomes one homogenous dough.
  5. Flatten the dough on baking paper to a rectangle shape.
  6. Make the filling by mixing the stevia and the cinnamon in a bowl. Crush pecans or your choice of nuts and add them in the bowl and add the melted coconut oil. Mix everything together.
  7. Lay the filling on the dough evenly.
  8. Roll up the dough using the baking sheet´s help into one big roll.
  9. Cut the roll up into 9 small rolls.
  10. Put the rolls on a tray and put them in the oven for 20 min.
  11. While the keto cinnamon rolls are in the oven do the frosting by pouring all the ingredients in a bowl. You should melt the cream cheese a bit. Then mix everything together with a mixer.
  12. Take the rolls out of the oven and let them cool off. Then put on the frosting and enjoy! You can add extra cinnamon as you wish.
